Campfire Meal Idea #1: For The Hearty Lunch
HOT DOGS WITH QUICK CAST-IRON BEANS
Ingredients
Canola oil, for grill grate
1 tbsp olive oil
1 small onion, diced
1 (15-ounce) can small white beans, rinsed
4 plum tomatoes, chopped
2 cloves garlic, chopped
2 tbsp molasses
Salt and freshly ground black pepper
2 tsp red wine vinegar
2 tsp Worcestershire sauce
6 hot dogs
6 hot dog buns
Ketchup, mustard, and relish for serving
Method
Step 1: Set up grill for direct and indirect cooking and heat to medium. Once hot, clean and lightly oil grates with canola oil.
Step 2: Heat olive oil in a 9-inch cast-iron skillet over direct heat. Add onion and cook, stirring occasionally, until tender, 2 to 4 minutes. Add beans, tomatoes, garlic, and molasses. Season with salt and pepper. Transfer skillet to indirect heat. Cook, stirring occasionally, until tomatoes break down, 15 to 20 minutes. Remove from heat. Stir in vinegar and Worcestershire.
Step 3: Grill hot dogs over direct heat, turning occasionally, until warmed through, 5 to 6 minutes. Grill buns, if desired. Serve hot dogs in buns with beans, ketchup, mustard, and relish alongside.

Campfire Meal Idea #2: The ‘Foodie’ Dinner
BBQ MANGO CHEEKS WITH LAMB
Ingredients
2 mangoes
8 lamb cutlets
1 splash vegetable oil
1 pinch salt and pepper *to season
Dressing
1 red long chilli finely sliced
1 cup coriander leaves
1 lime juiced
1 tsp brown sugar *to taste
Method
Step 1: Start by making a mango hedgehog, but without turning mango cheeks inside out.
Step 2: Heat and lightly oil a BBQ hotplate, add the lamb (seasoned with salt and pepper) and mango cheeks making sure the mango is flesh side down. Cook lamb to your liking and the mango until it is caramelised.
Step 3: Dressing: Combine chilli, coriander, lime juice and stir in sugar to taste.
Step 4: To serve, turn mango cheeks inside out and place on a large platter with cooked lamb, then drizzle with dressing and serve.

Campfire Meal Idea #3: The Classic Aussie Snack
CAMPFIRE DAMPER
Ingredients
450g self-raising flour
1/4 tsp salt
180mL milk (if too dry, add a bit more)
1 tsp caster sugar
80g chilled butter
Extra flour, if needed
Method
Step 1: Mix flour salt and sugar together in a bowl. Rub the butter into the flour with your fingertips until it looks like breadcrumbs.
Step 2: Add milk slowly and mix to form a soft dough.
Step 3: Knead lightly on a floured board until smooth. Shape into a round loaf, brush with milk and cut a cross in the top surface of the dough.
Step 4: Grease tin foil and dust with flour. Add bread dough and wrap.
Step 5: Place in the coals of the fire and let it bake for about 30 minutes.
Step 6: To taste if it’s done, tap the loaf and it should sound hollow. Cut into moderately thick slices and serve while still warm, topped with butter, golden syrup or your favourite jam.
You can add a variety of ingredients to damper for a different flavour, such as dessicated coconut, cinnamon, sultanas or extra sugar for a sweeter bread.

Campfire Meal Idea #4: A Wholesome Brekky
CAMP BREAKFAST
Ingredients
6 slices bacon, cut crosswise into 1/4-inch pieces
1 tablespoon olive oil
2 white potatoes, cubed
salt and ground black pepper to taste
1 onion, chopped
4 eggs, beaten
Method
Step 1: Cook and stir bacon in a skillet over medium heat until crispy, about 5 minutes. Transfer to a paper towel-lined plate to drain, discarding most of the grease.
Step 2: Return skillet to the stove and add olive oil; heat over medium heat. Add potatoes, salt, and pepper; cook and stir until browned and somewhat crispy, about 10 minutes.
Step 3: Mix onion into potatoes and cook until onion is translucent, about 5 minutes. Return bacon to the skillet; cook and stir until heated through, 1 to 2 minutes.
Step 4: Pour eggs over potato mixture; cook and stir until eggs are set, 5 to 6 minutes.
